Chicken Tray Bake
Ingredients
500g chicken breast, sliced in half horizontally
200mls of marinade - honey soy, teriyaki or tandoori
1 small sweet potato, cut into pieces
1 medium zucchini cut into slices
Butternut pumpkin cut into pieces
2 carrots cut into pieces
Olive oil spray
Baby spinach leaves to serve
Method
Pre-heat the oven to 200C fan forced.
Place sliced chicken pieces in a bowl and add your choice of marinade, place in fridge for min 30mins.
Place pumpkin, sweet potato, zucchini and carrot on a tray and spray with olive oil
Place in the oven and bake for 15mins
Add the chicken pieces to the tray and cook for a further 20-25mins or until chicken is cooked.
Serve with baby spinach leaves
Note: make an extra tray for lunches
